How To Make Vegan Marshmallows

Marshmallows are a delicious treat, however there is a sad realization about it. Marshmallows use gelatin as a thickening agent. To those who don’t know what gelatin is, it is made by boiling the skin, bones, and connective tissues of animals (cows, chicken, pigs, & fish). I am not posting this to scare or disgust, but just let you know about what you are eating. Reading the labels are very important in order to know what you are putting into your body. This vegan marshmallow will be able to be used for an ingredient marshmallow, as in rice krispie treats, fondant, and s’mores (not for toasting). This marshmallow doesn’t toast, but still taste like a marshmallow so it could be used in different types of s’more like treats (i.e S’more ice cream, S’more Macarons, etc.) If you have recipe you would like to see me make, let me know in the comments below. Vegan Marshmallows

Ingredients
  1. 4 teaspoons agar powder
  2. 1 cup cold water
  3. 1 3/4 cups granulated sugar
  4. 3/4 cup light corn syrup
  5. 2 tablespoon vanilla extract
  6. 1/4 cup cornstarch
  7. 1/4 cup powdered sugar
Instructions
  1. Soak agar powder in 1/2 cup cold water for about 10 minutes.
  2. Combine the other 1/2 cup cold water, 1 3/4 cup granulated sugar and 3/4 cup corn syrup in a medium saucepan and bring to a boil on medium heat. It needs to be heated to 240-246*F.
  3. Heat agar over low heat and stir until it softens and dissolves.
  4. With whisk attachment, place agar into the bowl. Slowly pour over the hot sugar mixture and vanilla.
  5. Beat the mixture on high for 10-15 minutes. *Should resemble whipped egg whites.
  6. Combine cornstarch and powdered sugar in bowl.
  7. Place half of the cornstarch and powdered sugar in a cake pan.
  8. Pour vegan marshmallow mixture into pan.
  9. Sprinkle top with the other half of the cornstarch and sugar mixture to coat well.
  10. Let sit so marshmallows can firm up.
  11. Once marshmallows are firm, cut into pieces and store in an airtight container in the refrigerator.
