No Bake Energy Bites

October is National Cookie Month, but because I’m in Boston without an oven, I was discouraged. However, I found this no bake cookie recipe that I wanted to make a bit healthier. I have been eating two of these about 10-15 minutes before my morning run. They give me energy and the feeling of satisfaction without feeling full. No Bake Energy Bites

Ingredients
  1. 1/2 cup nut butter
  2. 1/3 cup Honey (or Agave)
  3. 1 tbsp vanilla extract
  4. 3 tbsp unsweetened cocoa powder
  5. 1 cup old fashioned oats
  6. 3/4 cup sweetened coconut
  7. 1/2 cup flaxseeds
  8. 1/4 cup semi-sweet chocolate chips
Instructions
  1. In a bowl, combine nut butter, honey, vanilla extract, and cocoa powder. Mix until thickened.
  2. Add two tablespoons of warm water. Mix.
  3. Add flaxseeds, coconut, oats, and chocolate ships. Mix until well incorporated.
  4. Now form one ounce balls.
  5. Store in fridge for up to 7 days.
