Vegan Mint Chocolate Chip Ice Cream

As a child, my favorite flavor of ice cream was hands down Mint Chocolate Chip, but now it’s Vegan Mint Chocolate Chip Ice Cream. I loved the coolness and refreshing flavors of the mint and who doesn’t love chocolate. However, as I have grown older, I have began to appreciate the more natural flavor of mint. You have to enjoy the herbal essence of mint instead of the fake peppermint that most people think of. The vegan mint chocolate ice cream recipe requires no special machine minus a blender. Ingredients
  1. Fresh Mint | 1/4 Cup
  2. Cocoa Nips | 1/4 Cup
  3. Frozen Bananas | 4 ea.
  4. Nut Milk of Choice | 1/4 Cup
Instructions
  1. Add all ingredients to a blender minus a handful of the cocoa nibs.
  2. Blend until smooth.
  3. Pour batch into a freezer safe container and add the rest of the cocoa nibs. Freeze for a few hours.
  4. Scoop & Enjoy!
