You don’t need to be an expert to make pickles at home! This recipe for Spicy Overnight Pickles only require 10 minutes of prep and night of soaking. Pickles go great on your next vegan burger or to enjoy alone. I made Pickle Spears, but this recipe is great for any pickle shape or even a different vegetable like cauliflower or beets.
In a medium sauce pan, bring to boil 1/2 Cup of water, apple cider vinegar, white vinegar, brown sugar, dill, red pepper flakes, celery seeds, and garlic powder. Allow to boil for 1-2 minutes. Set aside to cool while prepping cucumbers.
Slice, cut, or prep cucumbers into whatever shape you'd like. Place into a mason jar or another airtight container.
Pour over the vinegar brine over the cucumbers. I like to fill the remaining space of my container with water. Allow to sit in fridge for overnight or for about 12 hours. Enjoy!
