How to Make Spicy Overnight Pickles | Easy Pickle Recipe!

You don’t need to be an expert to make pickles at home! This recipe for Spicy Overnight Pickles only require 10 minutes of prep and night of soaking. Pickles go great on your next vegan burger or to enjoy alone. I made Pickle Spears, but this recipe is great for any pickle shape or even a different vegetable like cauliflower or beets. 

This recipe for Spicy Overnight Pickles is the second recipe of many that will be a part of my summer #vegan recipes series. This series will be a collection of some of my favorite, but quick recipes that you can take to your next gathering for you or to share with others. Ingredients
  • 5-6 ea Cucumbers
  • 1/2 Cup Apple Cider Vinegar
  • 1 Cup White Vinegar
  • 1/2 Cup Brown Sugar
  • 1 Tbs Red Pepper Flakes
  • 1 Tbs Celery Seeds
  • 1 Tsp Garlic Powder
  • Water 1/2 Cup + 2 Cups
Instructions
  1. In a medium sauce pan, bring to boil 1/2 Cup of water, apple cider vinegar, white vinegar, brown sugar, dill, red pepper flakes, celery seeds, and garlic powder. Allow to boil for 1-2 minutes. Set aside to cool while prepping cucumbers.

  2. Slice, cut, or prep cucumbers into whatever shape you'd like. Place into a mason jar or another airtight container.

  3. Pour over the vinegar brine over the cucumbers. I like to fill the remaining space of my container with water. Allow to sit in fridge for overnight or for about 12 hours. Enjoy!
