Coconut Macaroons (Easy Recipe)
|With last weeks episode of Peppermint Chocolate Macarons, I wanted to share with you the non-french alternative to them. These Coconut Macaroons have a different flavor and constancy. Coconut Macaroons

Ingredients
- 2.5 cups of shredded, unsweetened coconut
- 2 whole eggs
- 1 tsp of vanilla
- pinch of salt
- 1/3 cup of sugar
- dark chocolate for garnish
Instructions
- Preheat your oven to 350F.
- Mix EVERYTHING except the chocolate together.
- Use a spoon (I used a tablespoon measure) to scoop out the macaroons and place onto a cookie tray lined with parchment paper
- Bake for 10-12 minutes, or until nice and golden.
- Melt the dark chocolate.
- Drizzle the melted chocolate on top of the macaroons, or you could just dip the macaroons in the chocolate after they’ve cooled a bit!

Hi Jac, I love this easy recipe and ideal for both myself and daughter-in-law.
However the first time I tried it I could only make 16 “teaspoon” sizes (I used the small ice-cream type scoop). This time I used the larger one and made 8, obviously I had to cook them longer but they are perfect. Thanks
