How To Make Vegan Banana Coconut Chocolate Chip Cookies
If you didn’t know, October is National Cookie Month!!! I’ll be doing a new vegan cookie recipe every Monday during this month. Today, I’ll be making a recipe for Vegan Banana Coconut Chocolate Chip Cookies. These vegan cookies only have natural sugar and no sugar added, so you can eat this guilt free. 			How To Make Vegan Banana Coconut Chocolate Chip Cookies

			10 min 
		Cook Time
			20 min

		Ingredients
			- Banana | 1 ea
- Shredded Coconut | 1 Cup
- Cacoa Nibs | 1 tablespoons
- Cinnamon | 2 teaspoons
Instructions
			- Preheat oven to 350*F.
- Mash banana until mostly smooth. Some lumps are ok.
- Fold in the coconut, cacoa nibs, and cinnamon.
- Scoop out a tablespoon worth of cookie batter and place on a parchment or silicone lined sheet tray.
- Roll and flatten using your hands. You can optionally add a few extra cacoa nibs to the top of the cookie.
- Place into the preheated oven and bake for 20-25 minutes or until golden brown.
- Allow to cool and enjoy.
