Valentine’s Day is just around the corner and this recipe for Vegan Chocolate Covered Strawberry Truffles is perfect to enjoy with a significant other or even by yourself. This recipe also used Oat Flour making it Gluten Free. You can make your own oat flour, by using a spice grinder on oats to make it into a fine powder. Ingredients
  1. Fresh Strawberries | 10 ea.
  2. Organic Maple Syrup | 1/2 Cup
  3. Vegan Butter | 2 Tablespoons
  4. Vanilla Extract | 2 Teaspoons
  5. Oat Flour | 3/4 Cup
  6. Sea Salt | 1/2 Teaspoon
  7. Vegan Dark Chocolate | 1 1/2 Cups
  8. Vegan White Chocolate | 1/4 Cup
  9. Coconut Oil | 1 Tablespoon
Instructions
  1. Coursely chop the strawberries. Place the strawberries, vegan butter, maple syrup, and vanilla extract into a medium sized sauce pan.
  2. Cook the strawberries on medium heat until it simmers. Reduce heat and simmer for 20 minutes. Stir occasionally to prevent burning.
  3. After 20 minutes, remove from heat. Add oat flour and sea salt. Mix until a dough is formed. Place in the fridge for 30 minutes to chill.
  4. Once chilled, use a cookie scoop to scoop out 10-12 truffle sized balls from the strawberry dough. place in the fridge for another 30 minutes.
  5. While your truffles are chilling, melt your dark chocolate over a double boiler. To help in the melting process and to make it smooth, add a little bit of coconut oil. Repeat the same steps for the white chocolate.
  6. Dip the chilled strawberry truffles into the vegan dark chocolate. Make sure to shake off any excess chocolate.
  7. Garnish with a drizzle of the vegan white chocolate.
  8. Enjoy.
