Vegan Ice Cream Sandwiches are the perfect summer treat. The chewy cookies combines with the vegan ice cream, there is nothing to complain about. - 1 Batch of Vegan Chocolate Chip Cookies: http://bit.ly/VeganCCCookies
- 1 Batch of Vegan Coconut Ice Cream: http://bit.ly/VeganCoconutIceCream
- Using a cookie scoop, melon baller, or ice cream scoop, scoop out the Vegan Coconut Ice Cream on top of a Vegan Chocolate Chip Cookie.
- Top off with a second Vegan Chocolate Chip Cookie.
- Enjoy!
- This is best if you are in a hurry, or making a lot of ice cream sandwiches. Start off my laying down a sheet of plastic wrap.
- Scoop out the vegan coconut ice cream into two rows on top of the plastic wrap.
- Fold the plastic wrap over, and roll into a log. Place into the freezer for 30 minutes or until the log is hard.
- Once hard, using a sharp knife, cut out slice of the vegan ice cream and place onto one of the vegan cookies.
- Top with another vegan cookies.
- Enjoy!
