How To Make Vegan Pumpkin Pie Cookies
|If you didn’t know, October is National Cookie Month!!! I’ll be doing a new vegan cookie recipe every Monday during this month. Today, I’ll be making a recipe for Vegan Pumpkin Pie Cookies. These vegan cookies take all of the best parts of the pumpkin and make it hand-held. This is also a collab with Noreen’s Kitchen where she’ll be showing you how to make an Apple Pie Inspired cookie. How To Make Vegan Pumpkin Pie Cookies

A vegan cookie inspired the fall favorite known as the Pumpkin Pie

Ingredients
- All-Purpose Flour | 2 1/4 Cups
- Baking Soda | 1/2 teaspoon
- Baking Powder | 1 teaspoon
- Ground Cinnamon | 1 teaspoon
- Sea Salt | 1 teaspoon
- Coconut Sugar | 1 1/2 Cups
- Homemade Pumpkin Puree | 1/4 Cup (http://bit.ly/2dxNWn3)
- Corn Starch | 1 Tablespoon
- Vegan Butter | 6 Tablespoons, melted
- Coconut Oil | 1/3 Cup, melted
- Vanilla Extract | 2 teaspoons
- Chopped Walnuts | 1/4 Cup, optional
Instructions
- Whisk together flour, baking soda, baking power, sea salt, and cinnamon. Set aside.
- Whisk together coconut sugar, pumpkin puree, corn starch, vegan butter, coconut oil, and vanilla.
- Combine the wet and dry ingredients. Mix well until a dough is formed.
- Once you have a dough, chill in the fridge for one hour.
- After a hour of chilling, preheat the oven to 350*F.
- Scoop out cookie dough into tablespoon size balls. Place onto a parchment or silicone lined sheet tray.
- Roll with your hands to form a ball. Press onto the tray flat. This is where you can optionally add the walnuts to the top of the cookie.
- Bake the cookies for 10 minutes or until golden brown.
- Allow cooling before enjoying.
