If you didn’t know, October is National Cookie Month!!! I’ll be doing a new vegan cookie recipe every Monday during this month. Today, I’ll be making a recipe for Vegan Pumpkin Pie Cookies. These vegan cookies take all of the best parts of the pumpkin and make it hand-held. This is also a collab with Noreen’s Kitchen where she’ll be showing you how to make an Apple Pie Inspired cookie. Ingredients
  1. All-Purpose Flour | 2 1/4 Cups
  2. Baking Soda | 1/2 teaspoon
  3. Baking Powder | 1 teaspoon
  4. Ground Cinnamon | 1 teaspoon
  5. Sea Salt | 1 teaspoon
  6. Coconut Sugar | 1 1/2 Cups
  7. Homemade Pumpkin Puree | 1/4 Cup (http://bit.ly/2dxNWn3)
  8. Corn Starch | 1 Tablespoon
  9. Vegan Butter | 6 Tablespoons, melted
  10. Coconut Oil | 1/3 Cup, melted
  11. Vanilla Extract | 2 teaspoons
  12. Chopped Walnuts | 1/4 Cup, optional
Instructions
  1. Whisk together flour, baking soda, baking power, sea salt, and cinnamon. Set aside.
  2. Whisk together coconut sugar, pumpkin puree, corn starch, vegan butter, coconut oil, and vanilla.
  3. Combine the wet and dry ingredients. Mix well until a dough is formed.
  4. Once you have a dough, chill in the fridge for one hour.
  5. After a hour of chilling, preheat the oven to 350*F.
  6. Scoop out cookie dough into tablespoon size balls. Place onto a parchment or silicone lined sheet tray.
  7. Roll with your hands to form a ball. Press onto the tray flat. This is where you can optionally add the walnuts to the top of the cookie.
  8. Bake the cookies for 10 minutes or until golden brown.
  9. Allow cooling before enjoying.
