How To Make Candied Citrus Zest

Candied Citrus Zest can take your cakes, cupcakes, salads and other recipes to the next level. The are a nice balance of sweet and sour. Ingredients
  1. Zest of 1 Lime
  2. Zest of 1 Lemon
  3. Zest of 1 Orange
  4. Zest of 1 Grapefruit
  5. Granulated Sugar | 1 Cup
  6. Water | 2 Cups + 1 Cup
Instructions
  1. Using a peeler, peel the zest off of the citrus. Then with a sharp knife, slice them into matchstick sizes (julienne).
  2. Place all the sliced zest into a bowl and pour over 2 cups of boiling water. Allow them to sit for 30 minutes. Drain and set aside.
  3. In a medium sized pot, bring the sugar and 1 cup of water to a boil. Add the zest and cook for 10-12 minutes. Once done cooking, remove from heat and drain well.
  4. In a bowl, mix 3 tablespoons of granulated sugar with the zest. Lay the zest on a silicone mat or parchment paper. Allow to dry for a few hours.
  5. Enjoy on a cupcake or in trail mix or in a salad.
