How To Make Vegan Jambalaya

Jambalaya is a Cajun dish of rice with shrimp, chicken, and vegetables, however it is easily made into a scrumptious dish. This Vegan Jambalaya has a kick of spice and a punch of flavor. Ingredients
  1. Peas | 1/2 Cup
  2. Corn | 1/2 Cup
  3. Long Grain Rice | 1/2 Cup
  4. Black Beans | 1 Cup, Presoaked or Canned
  5. Onion | 1 ea, Chopped
  6. Bell Pepper | 1 ea, Chopped
  7. Jalapeno | 1/2 ea, Chopped
  8. Tomatoes | 2 ea, Chopped
  9. Carrots | 2 ea, Chopped
  10. Celery | 3 ea, Chopped
  11. Vegetable Broth | 2-3 Cups
  12. Garlic | 2 Cloves, minced
  13. Bay Leaves | 2 ea
  14. Paprika | 2 Teaspoons
  15. Cayenne Pepper | 1/2 Teaspoon
  16. Oregano | 1/2 Teaspoon
  17. Thyme | 1/2 Teaspoon
  18. Olive Oil | 3 Tablespoons
  19. Salt & Pepper | To Taste
Instructions
  1. Chop all of your vegetables.
  2. Place all ingredients, minus the rice, into your crockpot. Give it a good stir and cook on high for 2 hours.
  3. After 2 hours, you should notice that your vegetables are getting tender and aromatic. Add your rice.
  4. Allow the rice to cook until it soaks up most of the vegetable broth.
  5. Once the rice is cooked, it is ready to serve.
  6. Enjoy!
Notes
  1. If you don't like a certain ingredient, you can omit or substitute to make this recipe more enjoyable for your tastebuds.
