Roasted Cinnamon Sweet Potatoes | A Vegan Thanksgiving Recipe
|Thanksgiving is almost here and I’m ready to show you some of my favorite recipes to Celebrate a Vegan Thanksgiving. Today’s is for a delicious Vegan Roasted Cinnamon Sweet Potatoes. Thanksgiving is almost here and I'm ready to show you some of my favorite recipes to Celebrate a Vegan Thanksgiving. Today's is for a delicious Vegan Roasted Cinnamon Sweet Potatoes. This recipe can easily be enjoyed as an appetizer or as a side dish.
- 4-5 Medium Sized Sweet Potatoes
- 1 tbsp Organic Maple Syrup
- 1 tbsp Coconut Oil melted
- 2-3 tsp Cinnamon
- 1 tsp Sea Salt

Preheat oven to 400*F

Evenly chop sweet potatoes. This will ensure that all your dish bakes at the same time. Place into a large bowl.

Add maple syrup and coconut oil. Mix until everything is coated.

Place sweet potatoes onto a parchment lined sheet tray. Sprinkle on cinnamon and sea salt. Mix to make sure the cinnamon and salt coat all of your potatoes. Using a spatula or your hands, spread potatoes into an even, single layer.

Place into preheated oven for 40-50 minutes. The sweet potatoes should be fork tender and a golden brown color.

Once fork tender, remove from oven and allow to cool a bit. Serve immediately.
