Vegan Oatmeal Raisin Cookies!

This Vegan Oatmeal Raisin Cookie is chewy, soft, and oh so delicious.

Ingredients
- Old Fashioned Oats | 1 1/2 Cups
- All-Purpose Flour | 3/4 Cup
- Corn Starch | 1 teaspoon
- Baking Soda | 1/2 teaspoon
- Cinnamon | 1 teaspoon
- Nutmeg | 1/2 teaspoon
- Sea Salt | 1/4 teaspoon
- Ground Chia Seeds | 1 tablespoon
- Brown Sugar | 1/2 Cup
- Organic Cane Sugar | 1/4 Cup
- Coconut Oil | 1/4 Cup, melted
- Almond Milk | 1 tablespoon
- Vanilla Extract | 1 1/2 teaspoons
- Organic Raisins | 1/2 Cup
Instructions
- Start of by making a Chia egg by taking the Ground Chia Seeds and adding it to 3 tablespoons of warm water. Mix until well combined and allow to sit for 10-15 minutes. It should be very thick.
- In a bowl, combine the oats, flour, corn starch, baking soda, cinnamon, nutmeg, and sea salt. Shift using a whisk. Set aside.
- In a separate bowl, combine the chia egg, brown sugar, cane sugar, coconut oil, almond milk, and vanilla extract. Whisk until smooth and all the sugar clumps are dissolved.
- Pour in the dry ingredients into the wet ingredients. Fold together until the flour is combined using a rubber spatula. Once mostly combined, use your hands to mix until a dough is formed.
- Once a dough is formed, add the raisins. Mix a little longer until the raisins are distributed evenly.
- Place the dough in the fridge to chill for 30 minutes.
- After 30 minutes, preheat the oven to 350*F.
- Scoop out the dough using a cookie scoop and place balls onto a parchment lined sheet tray. Shape the cookies using your hand into flat circles because they won't spread out much in the oven. Bake for 10-12 minutes until the edges of the cookies are golden brown.
- Allow to cool before enjoying.
