Learn how to make Vegan Oatmeal Raisin Cookies in this first installment for National Cookie Month. October is National Cookie Month and for the last two years I’ve celebrated it by doing a vegan cookie series. This Vegan Oatmeal Raisin Cookie is chewy, soft, and oh so delicious. Start of by making a Chia egg by taking the Ground Chia Seeds and adding it to 3 tablespoons of warm water. Mix until well combined and allow to sit for 10-15 minutes. It should be very thick.
In a bowl, combine the oats, flour, corn starch, baking soda, cinnamon, nutmeg, and sea salt. Shift using a whisk. Set aside.
In a separate bowl, combine the chia egg, brown sugar, cane sugar, coconut oil, almond milk, and vanilla extract. Whisk until smooth and all the sugar clumps are dissolved.
Pour in the dry ingredients into the wet ingredients. Fold together until the flour is combined using a rubber spatula. Once mostly combined, use your hands to mix until a dough is formed.
Once a dough is formed, add the raisins. Mix a little longer until the raisins are distributed evenly.
Place the dough in the fridge to chill for 30 minutes.
After 30 minutes, preheat the oven to 350*F.
Scoop out the dough using a cookie scoop and place balls onto a parchment lined sheet tray. Shape the cookies using your hand into flat circles because they won't spread out much in the oven. Bake for 10-12 minutes until the edges of the cookies are golden brown.
